Ingredients
2smallripe avocados, flesh only
2tablespoonsfinely diced shallot
2tablespoonsfinely diced tomato
2teaspoonslime juice
2teaspoonsminced fresh cilantro
2tablespoonsfinely diced purple onion
2teaspoonsfinely diced jalapeño pepper
1teaspoonkosher salt
Freshly ground pepper
Instructions
Combine all the ingredients in a bowl and puree with an immersion blender. (Alternatively, blend using a blender or mix and mash with a fork for chunky-style.) Serve immediately or cover with aluminum foil to prevent oxidation, then refrigerate until use.
