Using a mandoline, slice each pear into pieces 1/4 inch thick. Arrange the slices in one layer without touching on the prepared baking sheets. Brush each slice with a bit of maple syrup and a sprinkle of the spice mix.
Bake the chips for 1-1/2 hours, remove from the oven, and flip them. Continue baking until the chips are crisp, 45 to 60 minutes longer. Let cool completely on the baking sheets, then serve or transfer to an airtight container.
