Edamame Hummus with Cucumber

Servings 1 cup

Instructions

  1. In a blender, puree 1⁄2 cup garbanzo beans, 1⁄2 cup shelled edamame, 1⁄4 cup extra-virgin olive oil, the zest and juice of 1⁄2 lemon, and 1⁄4 teaspoon kosher salt. Garnish with pepper to taste and serve with cucumber wheels.
