Brussels Sprouts and Avocado Salad

Ingredients

  • 1 cup brussels sprouts
  • 1/2 avocado
  • Zest of 1/2 lemon
  • 1 tablespoon lemon juice
  • 1/4 teaspoon kosher salt
  • Pepper

Instructions

  1. Thinly slice brussels sprouts crosswise until you reach the root. Discard the roots. In a bowl combine avocado, lemon zest and juice, and salt. Massage the brussels sprouts into the avocado dressing. Add a few grinds of pepper and chill, covered, for 30 minutes to let the flavors meld or eat right away.
