Product Review: Sans Bakery’s Lamingtons
What’s a lamington? This was the question pondered while taking the first bite into the large, spongy block of baked goodness coated with shredded sweetened coconut. Turns out the answer is heaven.
The easiest way to describe the fluffy gluten-free, dairy-free bar sold by New York City’s Sans Gluten-Free Bakery is to say it’s a single-serving gluten-free, dairy-free white cake with a with a thin center layer of strawberry jam and a very light chocolate coating covered with shredded coconut.
But that doesn’t account for the texture or flavor. The cake is indeed spongy. But it’s also light and silken, airy and delicate, moist and perfectly crumbly. Not too sweet nor not sweet enough with clean vanilla flavor countered by the sweet tang of strawberry jam and the barely-there outer layer of chocolate, it’s something one might imagine enjoying with a cup of tea, a blanket, and a book. Or just standing over the sink, attempting to slow down from wolfing the whole thing so you can enjoy every last crumb.
