Etalia Gluten-Free Margherita Pizza Product Review

There are a lot of good and passable GF frozen pizzas out there, but Etalia Pizza is the real deal. We’re talking a rising-crust, artisan pizza with such a crispy, crunchy outer crust, chewy center, and top-notch organic ingredients, flavor, and texture that you’ll want to hug the box and ask it where it’s been all your life. (And then stockpile pizzas in the freezer.)

The secret is in the crust. Sorghum flour gives it a whole-wheat-like, slightly molasses-y flavor. As the dough rises in the oven, big airy bubbles of glory form on its outer edges to create true Italian style and made-in-a-pizza-oven appearance. Then there are the toppings: homemade-tasting, tangy, organic tomato sauce; creamy, stretchy, organic mozzarella; and a few whole basil leaves. Bellisimo! 

The pizza is family-size at 13 inches in diameter. Be prepared: it’s expensive and not available in many stores. But if nothing but the best gluten-free pizza will do, this is the pie for you. 

Tips for achieving the perfect pizza:

  • Purchase the $8 pizza screen with your first order. Since the pizza arrives frozen and uncooked, it’s important to allow the hot air to evenly reach the bottom of the pie while cooking; proper air circulation allows the crust to get crispy and create the aforementioned magical dough bubbles. If you don’t get the pizza screen, do not use a baking sheet or pizza stone (the dough will stick). Instead, place the pizza directly on the piece of parchment paper included in the pizza box and place them together in the oven directly on the oven rack placed on the bottom (lowest) rack.
  • Keep the pizza frozen solid until right before cooking in a preheated 500°F  oven.
  • Do not use the convection setting and do not open the oven door for the first 10 minutes of cooking.
  • Bake the pizza on the bottom rack in your oven.If you like your pizza extra crispy, bake it for a few extra minutes. If the toppings are getting too brown, invert a baking sheet and place it on a rack above the pie.

    Good question. They ship frozen so it can’t be more than a couple of days!
