Product Review: Cup4cup Multipurpose Flour

We have a few favorite AP GF flours, and this GMO-free wheat-flour 1:1 substitute is one of them. From the team of famed chef Thomas Keller comes the first multipurpose gluten-free flour that gave us pretty even results when using it in a variety of recipes, including our mini chocolate cakes. We’ve been relying on it, with pleasure, for years, as have many restaurant chefs (get some of their recipes below). The flour mix has a soft texture and neutral flavor that will blend seamlessly in nearly all of your favorite recipes. But with every GF flour mix we’ve tried, it’s not always the optimal choice to use across the board. But still, it’s one of the safest bets. FYI, it contains powdered milk, so it’s not suitable for people avoiding dairy.

    This is a very good flour blend. I like it for making cakes. It has leavening products added which produces a lighter, less dense cake. I also use a little of this flour mix, with a more dense flour mix, when I want a lighter dough for my pizza recipe. If you want more dense baked goods this is not the flour to use. I find Bob’s Red Mill AP or Baking Flour works well.
